When you’re over the whole "banana bread scene" but don't want your bananas to go to waste, add some chocolate!
Makes 12 servings. 130 calories per slice.
Ingredients
- 3 ripe bananas, mashed
- 1/4 cup puréed dates (or 100% pure maple syrup)
- 1 tsp vanilla extract
- 1 egg
- 2 Tbsp peanut butter (just peanuts & salt)
- 1/2 cup greek yogurt
- 1 cup all purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- Topping: Dark chocolate chunks & sea salt
Directions: In a bowl, mash bananas. Once done, add in egg, vanilla, puréed dates, peanut butter and yogurt, mix, until well combined. In a separate bowl, combine dry ingredients until well incorporated. Mix dry with wet. Mix well. Add to greased baking pan. Sprinkle with chocolate chunks & sea salt. Bake for 25-35 mins on 350.
