Meatballs for picky eaters (husbands & kids)




Does your husband ever say, "I only eat beef"? (eye roll) or maybe your kids are super picky and only like one type of food. Too much meat, esp processed meat is linked to inflammation, heart disease, cancers and diabetes. Here’s how to reduce meat intake without getting rid of it completely.


These “meat” balls are 50% shredded veggies, ground chicken, and beet root so they look exactly like ground beef 🤫and taste amazing.




Ingredients:


  • 1 lb organic ground chicken

  • 2-3 Tbsp beet root powder (with no other ingredients)

  • 2-3 cups Shredded carrot, mushroom, onion and garlic (2-3 whole carrots - no need to peel, 1 onion, 1 cup mushrooms, 2-3 cloves garlic)

  • - 1 egg

  • - 3 Tbsp bbq sauce

  • - 2.5 oz Bada Bean Bada Boom dry roasted fava beans, processed













Directions:

  1. Preheat oven to 400.

  2. Shred veggies with a food processor.

  3. On high heat sauté veggies, add water as needed to prevent burning, add sea salt.

  4. In a bowl add chicken, beet root, egg, bbq sauce, and processed dry beans.

  5. Once veggies are cooked toss into bowl. Mix well.

  6. Form into 33 balls. Place on baking sheet lined with parchment paper

  7. Cook for twenty mins, flip half way.


36 cals per meatball. Freeze and air fry as needed. Toss into gnocchi, serve in a sub, or Parmesan bake!
