Ramen with the same great taste & without the salt bloat.
If you have high blood pressure, heart disease, or that INSANE bloat and lethargic feeling after downing ramen this recipe is for you.
Ingredients (serves 2):
4 cups bone or regular broth (bone broth gives a boost of 10g of protein/cup)
2 tsp miso paste
2 Tbsp teriyaki (Whole Foods 365 organic --> 240 mg salt &15 calories/Tbsp)
2 cloves garlic, minced
2 tsp fresh ginger, minced
Veggies bok choy, mushrooms, onions whatever’s on hand -optional: seaweed
Noodles: 2 packets - Lotus Foods brown rice & Millet noodles (8g protein, 4g fiber & 260 Cals per pack)
1 egg
Protein: chicken or tofu (you can even skip if using bone broth + egg + noodle = 30g protein)
Directions:
Add broth to a large pot. Set to high and add ginger, garlic, onion, & teriyaki. Bring to a boil.
In a small bowl with miso paste, add some of the boiling broth. Mix until miso has dissolved and add to pot.
Reduce heat to simmer.
Add in veggies, and simmer for 5 mins. Add egg to broth with shell, set timer for 7 mins and remove after 7 mins!
Toss in noodles. Peel egg. Simmer broth for another 5 mins. Top with scallions, soft boiled egg and protein of choice.
