Pickled Watermelon Rinds




Ingredients:

  • 5 cups watermelon rind with pink flesh removed (1 large watermelon has about 10 cups rind)

  • 3/4 cup apple cider vinegar

  • 1 cup water

  • 1/3 cup honey

  • 1 star anise

  • ¾ tablespoon pickling spice

  • ½ tablespoon sea salt


Instructions

1. Slice off the top and the bottom of the watermelon so it stands up tall on countertop. Remove only the skin of the watermelon (green layer) with a knife.

2. Once skin is removed, Slice only the rind in thick wedges, trying to avoid cutting any of the pink flesh. Once all rind is sliced off, place wedges on cutting board and cut into 5' sticks.

3. Combine vinegar, water, honey, star anise, pickling spice and sea salt and add to a large sautepan on high heat. Bring to a boil and toss in watermelon rinds. Cook for about 3-4 minutes covered. Remove cover and reduce heat to a low simmer and cook for an additional 10 minutes.

4. Chill mixture in refrigerator for 2 hours. Enjoy!
