Skinny High Protein Carrot Cake



During WWII carrots were added to cake because they had to ration sugar. In 2020s quarantine our creativity brought us butter and sugar loaded mini pancake cereal.


Let's go back to the carrots in dessert.


Easy Slow Cooker Protein Carrot Cake:


Ingredients: (serves 4)

  • 1 cup high protein pancake mix (Trader Joe's brand - Kodiak Cakes may also work but haven't tested)

  • 1/4 cup powdered peanut butter

  • 1 Tbsp cinnamon

  • 1 tsp ginger

  • 1/8 tsp salt

  • 2 tsp vanilla

  • 1 egg

  • 1.5 carrots shredded (whole with skin)

  • 1 large banana

  • 2 Tbsp honey


Directions:

  1. Mix together pancake mix, powdered peanut butter, cinnamon, ginger, and salt in a large bowl.

  2. In a separate bowl, mash banana, add in egg, honey, vanilla, and shredded carrots.

  3. Pour wet ingredeitns into dry. Mix until well combined.

  4. Line slow cooker with parchment paper.

  5. Spray with avocado oil.

  6. Add batter to slow cooker.

  7. Set to low. Cook for 3 hours. Remove cake from slow cooker. Allow cake to cool.

  8. Remove parchment paper.


Nutrition comparison: 220 Cals, 13g protein compared to traditionally 325-400 calories and 3 g of protein


Eat as breakfast, a snack, dessert, or post workout

Top with Trader Joes whipped organic cream cheese (30 Cals/Tbsp)
